Update-Photos: Loft Dinner 02.21.09

This time last year, I had just gotten back from a cooking trip in Mexico so I have been seriously sad about not being able to make it out there again this year. So it just made sense that the first dinner of the year would start with regional mexican cuisine. I used recipes and techniques from the state of Jalisco, a state known for birria and tequila. For the first course, I cooked up local potatoes from Green Acres Farm with some of my favorite chorizo around, lamb chorizo from Mint Creek Farm. For the second course, I served a spanish mackerel ceviche cured with grapefruit and lime. The main course was a deconstructed birria; the tender goat was served inside a roasted poblano along with queso fresco.
